A memória da gastronomia e o turismo na Bragança Amazônica

O objetivo deste trabalho é discutir como a memória do saber fazer gastronômico pode se inserir como um produto turístico para além do mercado, trabalhando a vivência cultural e patrimonial de populações rurais do nordeste paraense, que têm como ponto comum o cultivo e uso de derivados da mandioca (Manihot utilissima) enquanto elemento básico da alimentação amazônica. A pesquisa permitiu a elaboração de um roteiro gastronômico alternativo para o município de Bragança, tomandose como protagonistas do mesmo os moradores das comunidades de Camutá (Sítio Grande), Japetá, Curuperé (área rural) e a sede do município. O trabalho foi elaborado a partir de pesquisa bibliográfica, documental e de campo com o registro do saber fazer dos investigados. Observou-se que os sujeitos da pesquisa entendem que a “cozinha do dia a dia” é um testemunho da memória cultural e que deveria ser percebida, divulgada e valorizada. Os entrevistados são representantes da gastronomia bragantina, cujo produto é herança perpassada por gerações a partir de conhecimento empírico e da memória social local. Conclui-se que, apesar da gastronomia local ainda não ser levada ao patamar de
significante turístico e sim apenas coadjuvante do mesmo, pode vir a se tornar a base para a implementação de um possível turismo de base comunitária.

The objective of this paper is to discuss how the memory of gastronomic know-how can be inserted as a tourist product beyond the market, working with the cultural and heritage experience of rural populations in the Northeast of Pará, whose common point is the cultivation and use of cassava (Manihot utilissima) as a basic element of Amazonian food. The research allowed the elaboration of an alternative gastronomic itinerary for the municipality of Bragança, taking as protagonists of it the residents of the communities of Camutá (Sítio Grande), Japetá, Curuperé (rural area) and the seat of the municipality. The work was elaborated from bibliographical, documentary and field research with the register of the know-how of the investigated. It was observed that the research subjects understand that the “day-to-day cuisine” is a testament to cultural memory and that it should be perceived, disseminated and valued. The interviewees are representatives of Bragantine gastronomy, whose product is a legacy passed down through generations based on empirical knowledge and local social memory. It is concluded that, although the local gastronomy is not yet taken to the level of tourism significant and only supporting it, may become the basis for the implementation of a possible community-based tourism.
