As características físico-químicas de frutas climatéricas são alteradas de acordo com o grau de maturação, evidenciado pelo aumento da taxa respiratória e produção de etileno, seguido pelo decréscimo no começo da senescência. A banana é considerada uma fruta climatérica e, portanto, apresenta alta perecibilidade. Diante disso, o presente trabalho teve como objetivo analisar as características físico-químicas da casca da banana in natura e desidratada de quatro espécies (nanica, prata, terra e maça) em diferentes estádios de maturação (verde, madura e senescência). Foram realizadas análises de umidade, cinzas, pH e acidez titulável. Os resultados de umidade para a casca da banana in natura, não alteraram significativamente, com exceção da banana terra, que teve sua umidade reduzida para 63,67% (senescência). Após a desidratação, apenas a umidade da banana terra apresentou uma variação significativa entre os estádios de maturação. As análises de pH e a acidez para as amostras in natura foram influenciadas conforme o grau de amadurecimento, sendo observado de forma geral um aumento da acidez e redução do pH, para todas as espécies. Após a desidratação o pH das bananas terra e prata não foi influenciado pelo processo de maturação. No entanto, a acidez das bananas maçã e terra diminuiu, e das bananas nanica e prata aumentou. Quanto ao teor de vitamina C, os frutos em senescência apresentaram teor superior aos frutos verdes, para todas as espécies, com exceção da banana nanica. Sendo assim, as partes consideradas não comestíveis, ou seja, aquelas normalmente descartadas podem ser utilizadas na elaboração de diversos produtos, como a farinha.

The physicochemical characteristics of climacteric fruits are altered according to the degree of maturation, evidenced by the increase of respiratory rate and ethylene production. The banana is considered a climacteric fruit and, therefore, presents high perishability. This fact potentiates their waste and an alternative to avoid this would be the full use of the fruit, consuming parts considered inedible as the peel, in the form of flour, as for example. The objective of this study was to evaluate the physicochemical parameters of moisture, ash, pH and titratable acidity of the in natura and dehydrated banana peel of four cultivars (nanica, silver, earth banana and apple) at different stages of maturation (green, mature and senescence). The results show that the humidity for the banana bark in natura did not change significantly, except for the earth banana, which had its humidity reduced to 63.67% (senescence). After dehydration, only the moisture of the earth banana showed a significant variation between maturation stages. Analyzes of pH and acidity for the in natura samples were influenced according to the degree of ripening, with an overall increase in acidity and pH reduction for all cultivars. After dehydration the pH of the earth and silver bananas was not influenced by the maturation process. However, the acidity of apple and ground bananas has decreased, and nanica and silver bananas have increased. As for the vitamin C content, senescence fruits presented higher content than the green fruits, for all the cultivars, except the nanica banana. Thus, the fruit peel in general presented good physical-chemical evaluation, and with great potential to be used as an alternative source of nutrients.
