D-tartaric acid is very widespread in the plant kingdom, being widely consumed in Brazil. The usual process of raw materials from the vines gives relatively low yield. A new extraction methodology called Mixed Method is based on the chemical control of the pH of the tartaric liquid until the formation of the crystals of the product. The dosages of tartaric acid in each step are made by the method of OIV quoted by Amerine et al. (3). The method, besides being economical, presents a production of tartaric acid up to 75%
