With the purpose of grouping soybean cultivars ( Glycine max), which allows the reduction of toasting time, preserving nutritive qualities of the meal and reducing the costs of industrialization, the urea activity of the sugar bean of the 25 cultivars recommended for cultivation in the State of Rio Grande do Sul was evaluated. values ​​of urea activity among most of the studied varieties. The cultivar BR 3 showed the highest activity (3.57 mg N / g meal / min at 30 ° C) and the cultivars IPARGO 20 and SANTA ROSA showed the lowest values ​​(0.49 and 0.32 mg N / g bran / min at 30 ° C). No cultivar showed sufficient low urease activity to dispense the industrial toasting of their bran. The authors concluded that it is possible to reduce roasting time for groups of cultivars with low urea activity.
